Be aware that kosher salt measures differently than table salt. Because the grains are larger, a given volume of kosher salt will contain less salt by weight than table salt with its small grains. And the two kosher salts commonly available, Morton and Diamond Crystal, differ from each other. Rule of thumb, when a recipe calls for one teaspoon of table (fine) salt, use 1-1/2 teaspoons of Morton Kosher and 2 teaspoons of Diamond Crystal.
