Seed Oils are Bad for Your Health

Most oils used in cooking are seed oils--in other words they are extracted from seeds. According to some wellness influencers and pundits, many seed oils (canola, corn, sunflower, cottonseed, soybean, safflower, grapeseed and rice bran oils) are deadly for our health, causing increased rates of obesity, diabetes, and other chronic diseases. This notion is pure nonsense.

This myth has gained traction online, but it doesn’t hold up under scientific scrutiny. Much of the fear stems from ignorance about fats and inflammation. The claim is that seed oils are dangerous because they contain omega-6 fatty acids, which are said to “cause inflammation.” This is an oversimplification. Omega-6 fats are essential fats—our bodies need them to function. An extreme overload of omega-6 compared to omega-3 will promote inflammation, but this never happens in human diets. Decades of research show that normal consumption of omega-6 fats does not increase inflammation or disease risk in humans. In fact, replacing animal fats with seed oils is known to have several beneficial effects.

It is also claimed that seed oils are “industrial” or “unnatural.” This is rhetoric and not science. Many perfectly healthy everyday foods are processed in some way. Processing alone does not make a food harmful; what matters is its chemical composition and health effects. And guess what, oils that the “seed oils are bad” crowd think are okay, such as olive and avocado, are also processed.

Refined seed oils are stable, safe to consume, and tightly regulated. Claims that they are “toxic” or uniquely damaging are not supported by credible evidence and are based on ignorance and misunderstanding.
