The Liver and Toxins
One of the important jobs the liver performs is to process unwanted chemicals in the blood, including toxins, and get rid of them via the bile or the urine. The liver does not concentrate and store up these toxins. This is a misconception of the liver's function, and liver has gotten a bad rap as being unhealthy to eat for this reason. The liver works by transforming and eliminating compounds rather than by stockpiling them. Liver is no more a toxin risk than other meats.


But I Don't Like Liver!
Liver could be the poster child for food that people just don't like. I am convinced that a lot of this dislike comes from liver being poorly prepared almost all the time. Specifically, it is regularly overcooked, and overdone liver is indeed pretty bad, chewy and dry! Cook it like you would a steak, searing it in a hot pan, and leaving a tiny touch of pink in the center. You might be pleasantly surprised!
