Another kitchen myth! Flipping burgers more than once is perfectly fine and is actually preferred for thicker burgers.

Why Multiple Flips Are Better

When cooking a thin burger, half an inch or less, you really don't have time for multiple flips so it doesn't make any difference. With multiple flips, you get a more even crust on the outside and better control of doneness throughout the burger. In either case, one thing you definitely should not do is press on the burger with your spatula, because this squeezes juices out and makes the burger less juicy.

By the way, this advice holds whether you are cooking on a grate over charcoal, on a flat griddle, or in a fry pan. And it holds just as much for steaks as for burgers.
